One of my all time favorite meals to make for dinner is crispy tofu fingers dipped in BBQ sauce, potato salad and some sort of salad on the side. Simple, but oh so good! The star of this meal is clearly the tofu. Tofu is something that can be absolutely amazing, or something that closely resembles soggy cardboard! #truestory
First thing, you will want to press the tofu (I always buy extra firm tofu for this recipe) for about an hour. I wrap mine up in a clean tea towel and then put something heavy on top of it, like my husbands coffee machine!
Once the tofu has been pressed for about an hour, I cut it in half, then half again, then half again (are you keeping up with me?!) You will end up with eight equal pieces. Then I slice them down the middle so they resemble fingers (better for dipping in that yummy BBQ sauce). You will end up with 16 fingers in total.
I take one whole egg and one egg yolk and mix them together in a bowl. Then I take about 2/3 cup of shredded dried coconut and run it through my Vitamin until it looks like bread crumbs (I don’t use bread crumbs as I find that they end up kind of mushy after a few dips and don’t stick very well – coconut works much better!). Then I add 1 tsp of garlic powder and 1 tsp of smoked paprika. Stir the mixture together.
I dip each piece of tofu into the egg mixture then the coconut crumb mixture and place on a baking sheet. Once the oven has pre-heated to 400 degrees I put the baking tray in for 30 minutes. After 15 minutes I take the tofu out and flip them and put them back in the oven for another 15 minutes.
I served my crispy tofu fingers with some potato salad and some Asian salad that we had kicking around in the fridge. Let me tell you, this dinner did not disappoint! IT WAS EVERYTHING!
I’m so glad that there were a few of these little crispy fingers leftover. I will be enjoying them again for my lunch today! When I have a nice lunch to look forward to it always makes my mornings at work go by just a little quicker than usual!
